Better late than never, linking up with Anne for Mystery Ingredient Monday.
This week, we’re in the kitchen with lemons.
Oskar is not a dessert person (somehow our marriage still works) but he does love himself some lemon meringue pie. He likes things that are sweet and sour… like me, I guess. I’m not much of a baker, so I called my sister and was like, “hey, can I come over with my wild children and we can all make pie together?” Poor sweet girl agreed.
We used good ole’ Martha Stewart’s recipe. Though we both have college degrees, we found the recipe confusing and nearly messed up the lemon filling, but we managed to salvage it. Oh, and I always use Smitten Kitchen’s all butter pie crust recipe, for quiche or pie or whatever pastry encased goodness I might be making, because MORE BUTTER.
Lulu napped and my cousin and her kiddos came over for swim lessons with Max, and I cooked with Laura’s help, meaning I took pictures of her making the pies. I also squeezed the lemons. Ok, I guess I made the crust, but she did everything else.

Then Lulu woke up and wanted to eat beef jerky off the ground, so my cousin got to hold two squirmy almost one-year-olds. Mine was obviously squirmier.
This stuff had to rest or chill between every step, so it ended up being an all day affair. I know we had tons of fun, though. Baking with family is always a good time! Even if your baby keeps trying to eat dog food and your three-year-old nearly plummets to his demise off the kitchen ladder.
Martha didn’t fail us here, although she needs to learn how to write a recipe in a comprehensible way. Or maybe I have to repeat 6th grade. Either way this was some good pie. See Anne and the rest of the chefs to see what they made from their lemons!
